Triangle Accent

This ridiculously tiny nano lot from Francisca and Oscar is a really wonderful combination of their perfect cherry picking, impeccable processing methods, and their involvement in the F1 Hybrid program. This ultra rare lot they made just for us to showcase the combination of these factors. 

They took one of the base cultivars from their F1 hybrid program a Rume Sudan Ethiopian landrace (one of the base pairs that most of the F1 hybrids are derived from) and performed their Yellow Diamond process on it. The result is incredible. This coffee tastes like the famed washed Ethiopian Yirgacheffes of olden days. 

It abounds with florals like lemon and orange blossom, sweet soft citrus with lemon, lime, tangerine and more, and a sweet roundness like stone fruit, pale and Blenheim apricots. This is unlike any Costa Rican coffee you have had before. 

The Yellow Diamond process removes all but 25% of the mucilage (honey) from the coffee for a delicate honey touch. The extended drying process utilizes 50% raised bed, 50% patio dried, turned constantly to ensure even drying.

This is a rare Once Upon a Time coffee. Limited to roasting once per week and limited to only 150 total 12oz bags.
