Nestor Lasso and Jhoan Vergara observed post-harvest processing in Acevedo, Huila, and noticed that the small farmers around them were being left behind due to the cost of equipment that they could not afford individually. Consequently, they decided to establish a shared hub instead. Now, every farmer who transports coffee through Peñas Blancas has access to the same level of fermentation precision as those who have the financial means to purchase high-end equipment. This initiative is not driven by charity; rather, it is the result of two individuals making a conscious decision to ensure that the tools used in farming do not serve as a barrier to achieving a great cup of coffee.

Colombia is often referred to as the “unfair origin” because it genuinely possesses an exceptional talent for producing exceptional coffee. Located in the Huila, Antioquia, Nariño, and Tolima regions, between 1,200 and 2,200 meters above sea level, coffee is harvested nearly year-round. Some producers conduct fermentation experiments that may seem extraordinary, but their taste is truly remarkable. Others quietly produce microlots that are so clean and juicy that they don’t require any experimentation at all. Regardless of the method, Colombia consistently delivers exceptional coffee.
