This juicy cup is introduced by the enticing aromas of raisin, nectarine, and a subtle hint of violet. The notes of candied almond, grilled lemon, and milk chocolate are complemented by the tangy acidity of red grapes. The finish lingers with the lingering flavors of grilled lemon and cardamom.
Nueva Vida is a small-scale family operation. Apart from Asdrubal, his daughter Mireya, and her husband Freddie, the family employs 3-4 pickers during harvest. Unlike traditional methods, Asdrubal pays them a weekly wage instead of based on the weight of cherries picked.
All the coffee cherries are honey processed on raised and covered beds. The cherries are floated and then fermented in covered tanks for 70 hours. After fermentation, they are depulped without water and taken directly to the raised beds. During a two-week drying period, the cherries are rotated. The current lot is predominantly Sarchimor and Acauã.
