Honey processing contributes to the rich body of this flavorful cup that's bursting with bright fruit flavors. Strawberry jam and navel orange notes dominate, with a pleasant backbone of milk chocolate and roasted hazelnut alongside bright Key lime acidity. The aftertaste features red grapefruit and a hint of mint.

Only the ripest coffee cherries are harvested, then selected by density and rinsed. The pulp and fruit are removed from the coffee cherry, leaving a thin layer of sticky mucilage. Then the cherries are dried on air-flow canopy beds for 16-20 days.

Filadelfia II is part of Finca Filadelfia, a familial inheritance divided among twelve siblings united in purpose. They keep the farm’s original name in honor of their parents. Their farm is accompanied by a small natural forest reserve that maintains excellent soil for their coffee and provides water.

Their father has been a source of inspiration and motivation for the siblings. With more than twelve years as the head of quality and buyer for InConexus in Huila, he is a respected figure among coffee growers. His commitment to quality has elevated the standards of coffee production far beyond Filadelfia. He teaches the younger generation and fellow growers the art of cupping, helping them enhance the quality of their coffee.

An on-site laboratory built by Ramón's father has helped them experiment with alternative processing methods and share advancements with neighbors, transforming Filadelfia into a hub of learning and innovation for the local coffee community.
