San Sebastián Reserva is sourced from a select group of producers in San Sebastián de La Plata, Huila, whose farms sit above 1,700 meters on the hillsides surrounding the town of La Plata. Chosen from hundreds of coffees evaluated each harvest, these lots represent the region’s exceptional growing conditions and dedication to quality. After harvest, cherries are hand depulped, fermented for up to 24 hours, washed, and carefully dried on parabolic beds under the sun.

More than a coffee, San Sebastián Reserva is the result of a long-term partnership built around quality, transparency, and mutual success. The project connects farmers and roasters through year-round collaboration, including local quality evaluation in Colombia, weekly sample cuppings throughout the harvest season, and regular farm visits. This hands-on approach helps ensure exceptional coffee while supporting sustainable relationships with the producers who make it possible.

Oliver Stormshak states, "This leads us literally to their doorsteps. We collaborate with our producers in the effort to generate beautiful coffees. Our direct relationships yield stunning coffees from exceptional producers."

"Once a coffee is in our roastery, we obsess about perfecting the roast for that coffee. We roast coffee by hand (sight, smell, sound) and cup every roast. Each coffee is roasted daily to highlight the 'taste of place' that is unique to each farm and origin. The next day we do it all again, tweaking the roast if necessary to liberate the most distinctive and captivating flavors of each coffee."
