Ricardo and Marco Ariz, a father-son team, produce our absolute favorite coffee in Central America. They use SL-28 cherries, a highly prized varietal from Kenya, to pulp their coffee. Before fermentation, they anaerobically ferment the beans for 72 hours. This unique process, which involves leaving some of the fruit on during fermentation, imbues the beans with an astonishing depth of fruity flavor.
