Organic Colombia is a delightful blend of strawberry, chocolate, and cinnamon, with citrus undertones that sparkle and a smooth, medium-bodied finish.
This traceable blend boasts a vibrant regional profile, sourced from Cooperativa Multiactiva de Asociaciones Agropecuarias del Tolima (Multicoop), an association comprising 379 producers with small farms in the municipalities of Planadas, Rioblanco, and Chaparral. Each producer operates their own micro-mill, where cherries are carefully harvested, depulped, fermented, washed, and gently dried on raised beds. Their impeccable farm management and post-harvest practices contribute to a clean and consistent blend, while the subtle variations from farm to farm create a rich complexity of flavors.
Tolima, Colombia’s third-largest coffee-producing region, accounts for 12% of the country’s annual production. Nestled in west-central Colombia, this region is encircled by the Andean mountains and the Magdalena river basin, making it relatively remote and challenging to access. Until recently, much of the coffee-growing area was considered unsafe due to the presence of the Colombian FARC. However, Tolima has experienced a significant decline in FARC activity, enabling increased accessibility to these nutty, tangy, fruity, and creamy-bodied coffees.
