Why did you decide to release a half-caffeinated coffee?

The simple answer? Life changes. We’d love to stay young forever, but aging is inevitable. As we grow older, it can be a little harder to enjoy as much caffeine as we did when we were younger. Even as a brand, Klatch Coffee is turning 33 in September 2026!

Coffee is our livelihood, but it’s also something we genuinely enjoy every day. Between our morning cups, daily production cuppings, and evaluating new coffees, it’s easy for caffeine to add up. We wanted an option that let us keep enjoying exceptional coffee throughout the day without always committing to a full dose of caffeine.

Here at Klatch Coffee, we genuinely love what we do, and we genuinely love each and every product we’ve created. Every single origin offering, every blend, and every espresso is a favorite amongst the team. Thus, we wanted to create an option for our team to enjoy and to be able to share with the world, too!

Ultimately, we wanted to create a less-caffeinated coffee because we love the taste of coffee, but we don’t always love how coffee might make us feel. And, we figured there may be others out there who feel the same way.

What are the components of this blend?

One Eye Open is made up of two components: a decaffeinated Colombian coffee and a caffeinated Sumatran coffee.

The Sumatran coffee in this blend originates from Lintong Nihuta, a town nestled within the northern Sumatra province. The farms, situated near the southern shores of Lake Toba, the world’s largest volcanic lake, benefit from the unique volcanic soil rich in nutrients, making it an ideal location for coffee cultivation in the region. The town itself sits on a plateau approximately 1,000 to 1,300 meters above sea level.

The coffee is a harmonious blend of ateng and jember varietals, undergoing the standard wet-hulling process prevalent in Sumatra. Most, if not all, coffee produced in Sumatra undergoes this process. Farmers meticulously depulp freshly picked cherries, ferment them overnight, wash them, and partially dry them before sending them to a mill. Unlike the standard washed process, the husk of the coffee is removed at an earlier stage when the green seed is still soft, necessitating utmost care and attention to prevent damage to the beans. After resting in greenhouses for about 13% dryness, the coffee is delivered to a second warehouse for further inspection and grading. Subsequently, it stays in this warehouse for two months before undergoing a final grading, hand-sorting, and bagging process to prepare for export. This meticulous processing method was devised to address the challenges posed by Sumatra’s naturally rainy and humid weather conditions, which can hinder the proper drying of coffee cherries and beans.

The decaffeinated Colombian coffee originates from southwest Colombia, specifically from the Huila region, situated between the majestic Andes mountains and the Magdalena valleys. Renowned for its high elevation, unique terroir, and climate, this region contributes 20% of Colombia’s coffee production. The coffee combines caturra and castillo varietals and undergoes decaffeination using a sugarcane ethyl acetate process.

Klatch Coffee is a woman-owned, family-operated coffee company based in Southern California and distributed worldwide. We source, roast, and brew our own coffee, and apply our scientific method to accomplish a taste best described with expletives and exclamations. Some say it’s obsessive, we say it’s fun. Our methodical approach is a mix of coffee artistry and mad science — obsessively meticulous and thoroughly documented over many tastings to get it just right. We call it our “peak of flavor method,” and it’s earned us a spot on the world coffee stage for three decades and counting. Here at Klatch, we spend a lot of energy searching for and studying about the best coffee we can offer. We value people and planet before profit, and at Klatch Coffee, the conversation around coffee never stops. Our Klatch Direct Trade Coffee journey begins with a partnership with like-minded producers - those who share our same commitment to ethics, excellence, environmental stewardship, quality, and community. We follow a Direct Trade Coffee model that is designed to meet the needs of the families in today’s market, and buy straight from the growers, cutting out the traditional middleman. In doing so, we're able to pay well above Fair-Trade minimums - by at least 25% - and often pay double or triple those prices based on the cup quality. Our buying model is designed to push the envelope of quality coffee by encouraging viable, meaningful careers in specialty coffee agriculture. We only buy Cup of Excellence quality coffee and above, often 90 points or more, and we believe that a farmer that grows such award-winning coffee should be given their due. Through our Klatch Direct Trade model, we have not only simplified the supply chain, but we've also improved the quality and sustainability for farmers and have built long-term relationships with producers in various countries.
