We at Klatch Coffee were initially drawn to Las Mercedes for its exceptional coffee. However, what has sustained our long-standing partnership as Direct Trade Partners is our shared love for community, the creativity and science of processing methods, and our unwavering commitment to consistently striving to make our coffee the best it can be.
The flavors of our Maracaturra are brought out using an ASD, or Anaerobic Slow Dry process. This process, similar to the one used to ferment wine, involves fermenting coffee without oxygen. After harvesting and cleaning the coffee cherries, they are placed in fermentation barrels and left for 90 hours, or until all air bubbles have dissipated. Subsequently, the coffee cherries are removed from the barrels and, depending on the weather, dried on raised beds for 30-45 days.
The world of coffee is interconnected. Our Klatch founder and CFO, Mike, makes annual visits to our farms, where we share the rich history of coffee, a journey that begins long before the coffee even reaches our roasters.
