Our Campo Claro Chiroso comes from four coffee-growing families in Huila, Colombia, working together through the Palestina Crop Management program—a collaborative initiative focused on exceptional cup quality and regenerative agriculture.
This rare Chiroso variety delivers an elegant, Geisha-like profile with sparkling acidity and silky sweetness. Only perfectly ripe cherries are selected before undergoing flotation, hand sorting, a 72-hour fermentation, and slow drying under canopies for 15–22 days. This meticulous process preserves the coffee's clarity, structure, and aromatic complexity.
Little is known about Chiroso's origins. Though discovered growing in Colombia's Antioquia region, its genetics are closely related to Ethiopian landrace varieties. Celebrated for its floral aromatics, silky body, and remarkable sweetness, Chiroso has quickly become one of the world's most sought-after coffee varieties.
