Our first-ever Chiroso release comes from cousins Stiven Vargas Rojas and Jorge Elias Rojas Vásquez in Tolima, Colombia. This microlot bursts with sparkling grape juice, raspberry, pink grapefruit, red currant, cardamom, and tropical fruit bright, juicy, and layered with a subtle spice.
Chiroso is a rare Colombian variety with Ethiopian landrace genetics, prized for its floral intensity, silky body, and refined sweetness think Geisha-like aromatics with Pink Bourbon texture.
This lot underwent a meticulous two-step fermentation: 36 hours in whole cherry, 24 hours in mucilage, then fully washed and dried in traditional marquesinas for clarity and vibrancy.
