This coffee is produced by smallholder members of the Asobombo Cooperative in Pitalito, located in the renowned Huila region of Colombia. Farms here are typically a bit larger than the national average, ranging from 3 to 5 hectares. Producers and their families selectively handpick ripe cherries and carry out processing on-site.
After harvest, the cherries are pulped using small hand crank pulpers, then fermented in tanks for 12 to 36 hours. The coffee is fully washed before being dried on patios or in parabolic beds, allowing for careful control and consistency throughout the process.
