Story
This Ethiopian natural opens with a vibrant acidity reminiscent of ripe kumquat. Bright notes of starfruit add a refreshing, tropical sweetness. As the flavors settle, a subtle oolong-like depth emerges, presenting a crisp body, soon followed by a complex finish.
This exceptional coffee originates from the renowned Gora Kone washing station, situated in Ethiopia’s celebrated Sidamo region. Gora Kone collaborates with approximately 700 to 800 smallholder farmers, each cultivating coffee on family-owned plots typically no larger than three hectares.
The farms are shaded by indigenous trees such as wanza and acacia, creating ideal growing conditions for high-quality Arabica coffee. During the harvest season—from November through January—farmers carefully handpick ripe cherries and deliver them to the washing station for processing.
This lot is naturally processed, with cherries meticulously dried on raised beds lined with mesh to promote airflow and consistent moisture control. The cherries are turned frequently and covered during the hottest parts of the day and overnight to maintain optimal drying conditions.
