The Alya Washing Station, managed and operated by Testi Trading, ensures adherence to strict quality protocols. During both the on-season and off-season, Testi oversees the station’s operations and mills and exports the products. Their primary objective is to collaborate with smallholder farmers, aiming to secure the best prices for their coffee, thereby ensuring fair compensation for the cherries they deliver.

A total of 400 smallholder farmers contribute their cherry to the three distinct Shantawene collection points.

The Process

For this natural coffee, the fruit undergoes meticulous hand collection and sorting, eliminating any under or overripe cherries. Subsequently, the sorted coffee cherries are transported to the raised beds for drying. This drying process takes approximately 15-18 days, characterized by slow and regular raking and sorting to preserve the exceptional natural quality of the coffee. To prevent over-drying, the dried coffee is covered during the hottest part of the day. Once dry, the coffee undergoes milling to remove the dried fruit, followed by further sorting and preparation for export.

Sidamo, also known as Sidama, is a coffee region located within the Southern Nations, Nationalities, and Peoples’ Region (SNNPR). Due to its political significance as the name of the province, Sidamo is often regarded as the larger coffee zone encompassing several other zones and woredas beyond Sidama itself.

The Sidama population, numbering around 3.5 million, speaks the Cushitic language Sidamigna. Like other ethnic groups in the country, they possess their unique traditions, culture, and celebrate their own New Year, known as “Fiche Chembelala.” This New Year holds immense pride for the Sidama people.

Characteristics and Use

Sidamo’s strength lies in its diverse variety, which often results in a profound complexity of taste. The farmers in Sidama cultivate their own unique varietals on small plots of land and deliver their yields to processing sites. This combination of “mixed heirloom” beans contributes to the sought-after complexity of Sidamo coffee. Sidamo coffee can be enjoyed as a single-origin coffee or as the foundation of a robust blend.
