This is the only honey-processed coffee in our current selection. Honey processing leaves part of the fruit pulp on the seed during drying, and that pulp provides the sweetness that yields a soft, syrupy cup. Our team taste white grape acidity and vanilla sweetness. Most unexpected was a hint of juniper, adding a piney, cooling edge against the sweetness.
The coffee originates from smallholder farms near Joyabaj in the Quiché highlands and is processed at the Joyabaj Wet Mill. Only five years old, the mill was built with sponsorship from the Guatemala Special Coffee Trading Federation. The families who own the farms manage selection, picking, and collection; for growers lacking transport, the mill collects the harvest. It is Fair Trade and Organic certified.
This coffee suits anyone drawn to light roasts with real body. Pour-over or filter methods show it best, allowing time for sweetness to expand while juniper remains distinct.
