Francisca Chacón and her husband Oscar are 3rd generation coffee producers in Costa Rica. Considered pioneers of honey and natural process coffees in Central America, the Chacón family consistently produces exceptional coffees. They built Las Lajas, one of the first modern micro-mills in Costa Rica, in 2006. Located in the Central Valley region (encompassing the provinces of San José, Heredia and Alajuela), today Las Lajas is at the forefront of the micro-mill processing trend. Both Francisca and Oscar believe in preservation of the environment. They helped start the movement towards lower impact, high-quality honey and natural coffees when they started experimenting with special processes in 2009. Water use at their mill is minimal, since the coffees do not undergo the traditional washed process.

Established in 2010 in downtown Floyd, VA (pop 432), Red Rooster was created with the simple notion of roasting excellent coffee for the owner’s existing coffee house. Soon, word of Red Rooster's quality spread around Virginia and up and down the East Coast.
