This shade-dried lot of “da ye” or big leaf white tea was grown in Yunnan province, China. This is a certified organic tea highly suitable for aging. Our lot was harvested in autumn of 2017 and has developed some complexity over the years. The resulting cup yields a tea with high floral character and intense sweetness. These whole leaves are fairly stubborn and won’t break easily, making them great for many types of tea brewing.

This shade-dried, large leaf, aged white tea has beautiful sugary sweetness and florality in the cup thanks to the careful farming practices at Ma Wei Shan tea farm. The crop was harvested in autumn of 2017 with a bud-heavy plucking standard (roughly 1 bud : 1-2 leaf ratio). This Yunnan white tea is known as “yue guang bai” ( moonlight white), because of how the dried leaf has signature white/dark sides, similar to the appearance of a waning moon. This tea was also said to traditionally be dried only at night under moonlight, though that story is unsubstantiated. The whole leaves are unbroken and fairly sturdy, making them suitable for aggressive brewing in different formats. Enjoy experimenting with different ways to brew this offering, and try multiple steeps.

MA WEI SHAN (“Horse Tail Mountain”) TEA FARM Located in the outer parts of Pu’er city, Ma Wei Shan Tea Farm spans about 32 acres in total; most of their tea rows are 15-30 years old. Producer Yuanzhen Li has been a lifelong farmer, and now, she manages the farm, organizing the tea pluckers and acting as an intermediary between the workers and management. Their farming system plans are thorough, and they're deeply committed to organic cultivation. To avoid using pesticides, they raise chickens on the farm to control pests and provide fertilizer.

WHITE TEA White tea is not rolled or oxidized, meaning that the fresh-plucked tea leaf is simply withered and dried, resulting in a delicate tea with a flavor profile true to its terroir. Despite its name, brewed white tea is usually a pale yellow color. The name “white tea” is actually derived from the characteristic silvery-white hairs on the unopened buds. They are most prominently grown in China.

It was some years ago that we Jon and Andrea, began to dream of serving a sweet, black cup of coffee to our customers in Arkansas. This coffee, the mythical bridge between the blended chocolate drink and a strong black cup, needed to combine the delicate flavors only present when coffee is grown and processed with love and care, roasted to enhance but not mask flavor, and brewed to highlight those flavors. This is how Onyx Coffee Lab was born in October of 2012.

Our mission is pretty simple: to source and serve the best coffees in the world. Perhaps this is really ambitious, but we believe it’s pretty simple. Customers want to taste differences in coffee, not only on the black coffee level, but also when espresso and milk are poured together, and on another level, when coffee is treated as a culinary item and paired with beverages and food items that you wouldn’t expect.

The best business practice that Onyx Coffee Lab has and strives to continue is to be an owner-driven business. The difference between an owner run café, restaurant, roaster, retail shop, and so on is almost always evident in customer service, quality of product and atmosphere. It’s no easy task to translate passion for award winning coffee into a well-run business. We think it’s a carefully constructed balance of demand for excellence, passion, heart, and recognizing when we need someone to step into a leadership role. Every cup of freshly roasted coffee from Onyx has been carefully curated by us- from the very beginning with the farmer, through the roastery and to our customers. Without all of those hands, we are nothing, and we are there over each step in the process, demanding, sipping, loving, encouraging, instructing. We are Onyx Coffee Lab.
