This year, we are delighted to offer their full Honey processed coffee. Unlike traditional methods that require water, the Delgados use a mechanical de-mucilager to remove the outer skin of the beans, eliminating the need for water. The beans, with their mucilage (pulp) intact, are then laid out on raised drying beds under a solar dryer. Every hour, the beans are turned by hand for eight hours a day, resulting in a beautiful Honey-like body.
