Our offering from the Santa Elena Estate has been processed using the Honey (miel in Spanish) process method. This process is also known as Pulped Natural. Unlike fully washed process coffees where all of the cherry fruit is washed away before drying, Honey process coffees are allowed to have a portion of the sweet coffee cherry fruit remain in contact with the coffee as it dried. This creates a nice balance of positive coffee acidity and sweet, fruity notes in the coffee. Costa Rica in particular, among other coffee producing Central American countries, has become well known for it’s Honey processed coffees.
