Decaf Monk is currently composed of a regional blend of smallholders from various regions in Colombia. It’s sourced through our friends at Ally Coffee, who also assist with importing our Guatemalan coffees each year.
This is the first time that we’ve carried a coffee that was decaffeinated via the Ethyl Acetate (EA) method. It’s processed by a Colombian company
...read more , Descafecol SA, in the town of Manizales, Caldas. In short, ethyl acetate, a natural solvent that’s derived from local sugarcane, is used to pull caffeine out of the green coffee! For more in depth info, check out this explanation provided by Ally.
Decaf Monk is as fresh and flavorful as our caffeinated coffees and pairs wonderfully with milk. You can expect this EA version to have a more fruit forward acidity, in comparison to previous Swiss Water processed offerings. It remains balanced with a complex cane sugar sweetness and cream-like body. Our current taste notes are all juicy, sweet, and comforting - dark chocolate, cane sugar, brown sugar, vanilla, cinnamon, winey, raspberry, cherry, orange.
