et. Lintongnihuta is a village near Lake Toba which is a large fresh water lake in the province of Northern Sumatra. The Lintongnihuta market offers coffees from Aceh Gold and Iskandar which are produced in the mountains around Lake Toba. Just like all coffees from Indonesia, this coffee is processed in the “Gillingbasah” method or “wet-hulled”. This is a process where the cherries are picked, pulped, fermented, washed, then dried to about 23% moisture. At this point, the parchment or papery skin around the seeds is removed and the coffee is allowed to fully dry to 12.5%-13% moisture. After the coffee is fully dried, the coffee is hand-picked of defective beans. This particular coffee has been picked through three times making it the highest quality level of Sumatra coffees “triple picked” and Grade 1.
