At Fazenda Sertao, the pulped natural process begins with mechanical separation of green/under-ripe/less dense cherries via density sorting, while simultaneously pulping the ripe/more dense cherries. Immediately after pulping, the coffee seeds or “beans” are moved directly to drying where they are allowed to dry with residual fruit intact around the seeds. Special care is taken here to insure that the left fruit does not rot or ferment. Great separation of ripe and unripe, as well as care during drying lend its self towards the clean complex cup that this great lot offers.
