se Caturra variety coffee trees are grown outside of the town of San Francisco de Heredia in the Central Valley of Costa Rica, at 1450 meters above sea level. Once picked, the coffee are shipped to the mill, depulped, and then lightly run through an aquapulper. In this mechanical washing technique, which the Costa Rican’s call Red Honey Process, water and friction is used to remove a small amount of the sticky mucilage, also known as honey. The honey covered coffee is slowly sun-dried, on both patios and raised beds. This processing results in an especially sweet and syrupy cup.
