rming spice comes out in the flavor, hinting at notes of clove and allspice. As the cup cools, a high-tone citrus sweetness and an aftertaste of brown sugar round out the cup. The Kilimanjaro Plantation is one of the largest and most technologically advanced coffee farms in Tanzania. They have set standards for their ecological methods of irrigation. The Kilimanjaro Plantation utilizes a drip irrigation system to minimize the environmental impact of the farm, using up to 60% less water than sprinkler systems. They have also constructed two dams to withdraw as little water as possible during the dry season. After the coffee is processed through the wet mill, the water is channelled to a water treatment system, to cleanse the water before being released back into the river. In addition to their water conservation itiatives, they have planted more than 10,000 trees to stabilize the environment. Most coffee cherries typically have two coffee seeds, or beans. The beans face each other as a pair with each having a flat side. The peaberry mutation has to be hand sorted, as there is a small percentage of cherries on each tree that only produce 1 seed in the cherry. The peaberry bean is smaller and rounded, without the flat surface. These seeds carry a higher density, and carry a more concentrated flavor as a result.
