This Sumatran coffee features a peppery pipe tobacco aroma. When brewed, it presents a deep, bitter-sweet chocolate flavor and plum sweetness. It's delicate body fades away with notes of gentle cedar. atak coffees come from a collaboration of a hundred small holder producers around the end of the lake in the Lintong region. Located at 1200-1600 meters above sea level, the volcanic soil and ideal rainfall levels contribute to deeply intense coffees, with higher acidity levels than other coffees from Sumatra. Blue Batak coffees are traditionally semi-washed and wet-hulled, where seeds still in their parchment are semi-dried, then stripped and fully dried on outdoor patios. Using the semi-washed and wet-hull process allows for more mucilage, sugars and alcohols to be absorbed into the cell structure of the bean during the drying process. This creates a deeply sweet and fruity coffee.
