ios family of farms run by the Canales family. Milton Canales operates the Las Termopilas farm, and has had success at the Cup of Excellence competition in the past. Milton Canales takes extra care, and grows the coffee at Las Termopilas organically, without the use of harmful pesticides or herbicides. This pulped natural processed coffee is OCIA Certified Organic. The Pulped Natural process begins similar to a standard "wet" processed coffee. The coffee skin, or cherry pulp is removed. By removing the cherry skin, only the "parchment coffee," or green coffee covered in a protective shell called "parchment," is left. Instead of fermenting the fruity mucilage and washing the coffee, the "parchment coffee" is sent directly to the patios to dry with the fruit still clinging to the parchment layer. The result of Milton's meticulous processing technique comes through in the cup.
