rnesto purchased the La Ilusion farm a few years ago. He operates the farm using sustainable practices and tries to maintain the natural balance of flora and fauna on the farm. La Ilusion borders one of the most important natural reserves in El Salvador, Los Andes. The location of La Ilusion on the Santa Ana volcano provides a special micro-climate on the farm, ideal for growing a great coffee. Ernesto has been focused on improving the harvesting and wet milling process. He supervises the process from planting, to harvest, to milling and trains his workers through the process to ensure he produces a great coffee. After harvesting the ripest cherries, the coffee is then sorted and selected again to ensure only the ripest cherries are sent to processing. After the coffee has been sorted, it is sent to another farm owned by Ernesto, Finca San Carlos, where it is washed and dried on patios. The attention to detail and focus on quality paid off big in 2008 when La Ilusion received 1st place in the 2008 Cup of Excellence Competition.
