o be processed, no matter how coached the pickers are, there is a certain degree of variability in the ripeness and color of the cherries. This year, we were able to work directly with Sergio to have them hand sort out the deepest, darkest red cherries to make up the Matazano lot. The results of this hand sorting produced amazing results in the cup. This is our third lot of Pacamara and arguably the best Pacamara lot from their recent harvest. On our recent visit to Los Planes, we were able to walk the farm and evaluate the quality of the Pacamara variety grown on the farm. With Sergio and Manuelito, the Farm Manager, we were able to personally select the best pickers to ensure the cherry selection was carefully managed and sorted before being processed directly on the farm. On our first visit, almost seven years ago, it was clear to us their commitment to quality and sustainable practices. They have been engaged in multiple sustainable initiatives over the last few years. Most recently, Finca Los Planes installed a new water recovery system to protect the water supply and purify the water before being released back into the ecosystem. This was our first opportunity to see the system in action.
