r green coffee sourcing program into new coffee producing origins all over the world. This year, our sights are set on the coffee producing countries of East Africa. Our work began over the winter with countless cuppings of day lots, separated by the various washing stations around Rwanda. The efforts of three washing stations stand out and will be the foundation of future direct trade projects. This lot, processed at the Kanzu washing station, ranks as one of our top scoring coffees from Rwanda’s 2012 harvest. Bourbon coffee cherries thrive at over 2,000 meters above sea level in the area of Nyamashekeon the southwestern shores of Lake Kivu, where several hundred farmers deliver their coffee cherry to Kanzu. At the washing station, the seeds are de-pulped from the coffee fruit using disc depulpers. They are then fermented for more than 24 hours—imparting complex flavors—before being washed in long channels, soaked overnight, and then dried on raised beds. Organic production is common in Rwanda though very few seek certification.
