the Pacific Ocean on one side and the Continental Divide on the other. Located in Volcancito de Boquete de Chiriqui in northern Panama, Duncan Estate has the ideal combination of rain, wind, sunshine, clouds, and cool temperatures. These natural assets have been built upon by owner Ricardo Koyner, whose efforts have resulted in multiple Best of Panama awards, all while using the humble Caturra and Typica coffee varietals. All Duncan Estate coffee is processed by the Kotowa Mill with a focus on low environmental impact production and processing. The mill uses one liter of water per pound of green coffee, much lower than the 10-20 liters used by many other mills. The milling byproducts (pulp, wastewater, etc.) become organic fertilizer used at Duncan Estate, where the coffee is fermented in tanks for ten hours to fully remove any remaining solids. Coffee is then dried on raised beds before resting for 90 days.
