Good Food Awards Winner! We are excited to welcome to the Yukro to the menu for the first season. Yukro, named after the village it is in, is located in the Gera District and Jimma Zone of Western Ethiopia. This part of Ethiopia has been historically known for producing low quality coffees. However, over the last few years a few smaller mills have sprouted up and begun more precise
harvesting and processing which has quickly put them on the map as some of the best coffees in the world. Yukro is a cooperative made up of just under 400 members who operate both as shareholders and farmers who deliver coffee from small plots.
Yukro, which is in their 3rd year of operation, was started in partnership with an NGO named Technoserve. Technoserve partners with small cooperatives and farms to give them the tools needed to improve quality, market their coffees, and ultimately earn more well deserved money for their product.
With Ethiopia being the birthplace of coffee, there are a lot of factors that set these coffees apart. Coffee in this area actually grows wild and some coffee trees are hundreds of years old without any fertilization. Whereas many parts of the world have identified varieties that are planted throughout their farms, this coffee is actually a blend of heirloom varieties which is likely what we can attribute to the complexity and powerful aromatics.
In the Yukro Cooperative, the coffee cherries are picked, demucilaged (a process that removes the skin and nearly all of the mucilage), then soaked overnight in water and washed the next morning to assure all of the mucilage is completely removed, resulting in an extraordinarily clean cup before drying on raised beds.
