g of 2011, since then we have had to have the opportunity to purchase all the top tier quality coffee they produce. Didier is committed to improving year after year to produce great quality coffee. This year we were able to receive the largest quantities from Didier and also the best quality we have seen yet. Didier’s coffee first caught our attention with it big flavor packed full of grapefruit and acidity. Outside of the great growing conditions of the farm, Didier attributes a lot of the flavor to his processing style. Whereas most producers in the area (including Luis), depulp the coffee cherries from a day of picking, ferment for roughly 15hrs , wash and then sun dry the coffee for 10-15 days. Didier, instead depulps the coffee, ferments for 15hours, rinses the coffee and then (this is where it gets unique!) blends it with freshly picked and depulped coffee from the following day where it is then fermented together for 15 more hours, washed and sun dried for 10-15 days. So the final result is two different days of coffee extensively (and manually by hand) mixed together, each with different lengths of fermentation. The unique processing, adds a touch of body and some extra fruit forward sweetness. Along with coffee, Didier farms avocados, plantains, yucas, and herbs. They also raise ducks and chickens on their land. Although Didier and Luis have very similar growing practices, elevation and soil due to slight differences in the terroir and fermentation process there are large distinctions between the two coffees.
