Welcome Borana to the menu, our latest offering from Ethiopia! At Madcap, we have always been excited and invested in finding outstanding coffee from this area of Ethiopia. However, this year we are particularly ecstatic as we have the opportunity to share a coffee from a smaller sized cooperative in the Borana micro-region of Yirgacheffe, offering an even more nuanced flavor. Thi
s coffee comes from a cooperative that belongs to the Oromia Coffee Farmers Cooperative Union (OCFCU). OCFCU was created in 1998 to support more stable and transparent trade for coffee producers with an emphasis on producing specialty coffee. The Union now works with a handful of cooperatives and thousands of households creating higher wages and implementing programs to promote more sustainable agricultural practices. Ultimately, the flavor of this coffee won us over from the start as it encompasses the general bright, clean, tea-like qualities of a typical Yirgacheffe with a pronounced complexity and sweetness throughout.
Yirgacheffe, as a district has always maintained a beautiful reputation for producing some of the world's most unique and exceptional coffee. Yirgacheffe is located a few hours south from Addis Ababa into the Rift Valley. The coffee from this area is marked with floral aromatics, sparkling transparency and a seductive complexity that is rivaled by very few coffee origins. The terroir in this area allows for the production of coffee at elevations higher than most areas of the world lending to the brightness perceived in the cup. Ethiopia, being the birthplace of coffee also has a plethera of wild and unknown heirloom coffee varieties supporting the complexity and unique diversity found in the cup. Lastly, the coffees in this area have historically been known to go through an extensive washing process prior to being dried to assure that cleanliness, clarity and pure transparency is experienced in the final product.
