stics are significantly different. The Pirineos is bright, sweet and citrusy while the Buenos Aires is more nuanced and rich with notes of butterscotch and low acid fruit. The coffees come together in this limited-time espresso blend, exhibiting balance and complexity that highlights the flavor characteristics of both coffees. Salspresso has undergone several iterations of roast profile and adjustments of blend percentages. Much to our surprise, an early decision to take an unusual tack with the approach to the roast, yielded promising results. Often, with espresso roasts, we are gentle with the application of heat, which tends to produce the best results when the coffee is prepared under the rigors of espresso extraction. With Salspresso, we were more aggressive with the use of heat than we usually are with espresso roasts. Our goal was to bring out the bright and fruit-centric characteristics of the component coffees, while developing sweetness and a silky mouthfeel. An interesting side note, this blend is made up of almost entirely Bourbon variety coffee. There is a tiny bit of Pacamara, which also happens to have Bourbon in its heritage.
