s grown. Although coffee has been produced in this older growing area for more than three centuries, over the last few decades production has been small. This is due in part to volcanic activity (there are seven active volcanos in the area) and focus on other agricultural products. Things started to change in the 1990s, with the help of government sponsored projects that promoted coffee as a replacement crop. The high altitude and steep terrain makes this area ideal for coffee cultivation; it is much less damaging to the soil than other crops because coffee does not require invasive tilling. Recent educational outreach has led to planting of more coffee and more shade trees which helps with erosion and water quality improvement. The Sunda Hejo project is focused high quality coffee, which encourages farmer partners to increase yield and harvest ripe cherry. Our Sunda Hejo coffee is produced by a group of approximately 100 farmers who belong to a cooperative called Klasik Beans. Each farmer cultivates small, one and two acre plots and work together in village based groups located in the Garut and Bandung Regencies. Klasik Beans manages three mills within these districts, where the coffee is fully washed, fermented and 100% sun dried. Final dry milling and grading takes place in Bandung City, one of the largest cities in Indonesia. The processing method results in crisp and nuanced flavors; a far cry from the deep earth-toned wet hulled coffees so common in neighboring Sumatra. For those interested in linguistics, Sunda is the name of the tribal people who live in the western part of Java, and Hejo means green.
