rm, placing in the top ten of Guatemala Cup of Excellence every year for the last seven years, amassing a total of five first place awards. With such staggering success and demand for its coffees, El Injerto decided to hold its own auction, offering a selection of micro-lots that comprise unique varieties and processing methods. We are happy to announce that we had the winning bid on one of these lots! The farm was founded by Jesús Aguirre Panamá in 1874, with the first coffee planted around 1900. Today El Injerto is managed by the third and fourth generations of the Aguirre family. Located in the Huehuetenango growing region, the property is planted with about 620 acres of coffee with another 1,160 acres of rain forest preserve surrounding the farm. El Injerto is further sub-divided into 14 sections, with our lot of Maragogype variety coffee from the 55 acre plot known as Tanzania. Maragogype is a variety of Arabica species coffee that produces an extremely large bean. It is a natural mutation first discovered in Brazil near the town of Maragogipe, in Bahia state, and since planted in countries throughout Latin America. The so-called “elephant bean” variety is just 2% of El Injerto’s production but, it has naturalized especially well on the farm. The coffee is delicate and we choose to be gentle with our approach to the roast in order to bring out its subtle yet complex range of floral, melon and stone fruit flavors.
