and started pulling shots. Such tremendous clarity and sweetness manifested itself in the cup; we knew we wanted more people to share in this experience. Like the Holiday Blend, Eye of the Tiger Espresso contains a coffee from Gillio Ferraro’s farm El Espino, in Zarcero, Costa Rica, located in the West Valley growing region. We used this perfectly balanced, sweet and spicy coffee as a foundation of the blend, adding a coffee from Kenya to build layers of flavor including crisp and zesty citrus notes. We ended up using a different Kenya coffee than the one in our Holiday Blend; this one is a peaberry grade (a small oval coffee bean) produced by the Mutira Farmers Cooperative Society at their Mugaya mill in the Kirinyaga growing region. Together these coffees, along with a decisive roast profile, bring out the clean and brisk flavors that jumped out at us when we pulled those first shots of espresso. We will roast the Eye of the Tiger as long as the blend components last, which we hope will be until the end of the year. Cupping Notes Long lasting sweet citrus-toned flavor tempered by rich caramel, delicate spicy nuances and a clan, brisk finish.
