ay be familiar with this coffee in the form of our standard roast Costa Rica Beneficio Los Angeles. We began running espresso roast profile tests with this coffee in the latter part of 2012 and were very happy with the early results. Because espresso is such a unique brewing method, our approach to this version of the roast is quite different than our regular roast. The high elevation of La Bisunga yields a distinct acidity that tended to overwhelm the flavor nuances when prepared as espresso. We decided to stretch the profile out, tempering the acidity slightly, while building a little more sweetness and retaining complexity. Since the coffee is so well balanced, it translates perfectly to espresso extraction. La Bisunga is a small farm owned and operated by Rircardo Calderon, who also runs the award winning (2011 Costa Rica Cup of Excellence winner) coffee mill Beneficio Los Angeles. Ricardo, a second generation coffee farmer who has been involved in the industry for decades, carries on the tradition by working with his sons Maikol and Diego. We visited the mill in 2012 and were impressed with the passion of the Calderon family and the quality of coffee they produce.
