This lot was processed with guidance from local coffee expert Alisandro Rodriguez. Like last year’s lots, the coffee was graded at a dry mill where a technique was used that is unique to this origin and uncommon elsewhere in the coffee producing world. The grading technique involved multiple stages of density separation; the first taking place before the dry milling of the coffee began. Density separation is important because heavier coffee beans tend to be the most flavorful and these extra steps help ensure consistent cup quality throughout. Very little coffee is exported from the Dominican Republic to the United States. The region struggles with a broad range of pressures both on the economic and environmental fronts that make producing high quality challenging. We are happy to support the quality focused producers of this emerging growing region.
