state Minas Gerais. Today, José Junqueira, his wife Margarida and their sons Kleber, Ralph and Herbert, keep the family’s 200-year tradition alive. With just over 110 acres in production, Fazenda Kaquend is considered a small farm for Brazil. The relatively small size of the farm allows the family to experiment with the production process as they did with this three-bag “nano-lot” of Yellow Bourbon variety coffee. This tiny lot was processed by the natural or dry method where the beans are allowed to dry inside the fruit rather than after the fruit has been removed. The resulting flavor is silky and smooth with pronounced fruit-toned sweetness. Although we are not featuring this coffee as a Single-Origin Espresso, we pulled some shots and found the concentrated fruit aromatics blossomed in the small cup, while maintaining balance and smoothness. Espresso enthusiasts may want to give this one a try.
