We are very excited to bring Carmelo's organic coffee in again this year for a third year in a row. This year we asked Carmelo to do an experiment with a processing method often done in Kenya. With the double soaked method, after beans have gone through fermentation, they are moved to a new tank with fresh water and allowed to rest for 24 hours. The technique seems to brighten the coffee and adds to its overall balance. Here we have a fuller-bodied coffee with honey, and orange zest.
