n aberration from the traditional Brazilian cup profile. This is an all day drinking coffee that is sure to please a wide variety of coffee aficionados. The Santa Maria farm has 330 hectares however only 124 hectares are used in coffee production. Brazilian law stipulates that any farm must maintain a 10 percent natural forest preserve. Antonio Pelúcio is 72 years young and is a third generation coffee producer of Italian decent. He inherited the farm from his grandfather and has maintained a commitment to old tradition with the implementation of modern technology. The farm has 28 full time employees. Processing Notes Only red or yellow ripe cherries are pulped. Greens and overripe are prepared as “natural process”. Pulped coffee is passed to a cement drying patio. Mechanical driers may also be used in the event of rain or a lack of space on the drying patio.
