uces some of the best coffee that Guatemala has to offer. Now in it’s sixth year, our partnership with Edwin best embodies our Direct Trade philosophy. Carefully sourced and immaculately processed coffee that leaves a lasting impression with every cup. Honeyed or semi-washed is a style of coffee processing with which they keep 40%-50% of the sticky mucilage on the parchment of the bean before they are sent out to the patio to dry. This unique process gives the coffee an almost creamier body and somewhat tempers the vibrance of the acidity. What we find is still a very balanced cup with brown sugar and vanilla, as well as hints of tangerine and white peach. Creamy and lush on the tongue. Once again, Edwin has outdone himself and we here at Barefoot applaud the effort and the extreme eye for detail that his coffee preparation involves. Read some of the steps involved in this special honey prep: “What we did was take the lot to about 18 hrs of fermentation. Which is only about 4 hrs of real progress as we depulp EVERYTHING the day it's picked and so we are depulping until late in the night and not much happens that first night, it takes all day the next day for bacteria to grow and fermentation to happen. "We keep the fermentation tanks full of water through the night with the wet milled coffee under water and then we let it flow out mid morning the next day for a gentle non agitating clean and then we send them out to the patios and begin the drying process. We turn them almost non stop for the first entire day as the mucilage being so thick can cause accelerated fermentation in a pile that gets hot but not dry. So we turn and turn and turn to keep the drying uniform and prevent over fermentation from happening which is quite easy to do at this stage.
