d lemon. In the cup, a clean and clear sweetness with light brown sugar and mild marmalade accents. As the temperature comes down, mandarin orange flavors come forward. The body is a fine combination of syrup and creaminess. Mora Mora began with a single farm, owned and operated by farmer Haile Gebre. Together with some of the surrounding famers, they started their own cooperative replete with two washing stations where they are able to process their own coffee cherry. Haile Gebre is committed to price transparency, and provides members with the necessary agricultural education and tools, in order to facilitate sustainable business practices. Ultimately, by securing the best price for the top lots coming out of Mora Mora, Gebre is able to maximize the funds that are then distributed throughout the coop members. Haile Gebre’s previous occupation was with the Ethiopian government serving as the director of all cooperative business in Ethiopia. This background is what inspired him to start a cooperative of his own after retirement. The cooperative has field experts who provide agronomical education to members in an effort to maximize coffee cherry quality and production, and minimize impact to the surrounding environment. Waste water from the washing stations can be a big contributor to pollution of local water systems. The Mora Mora washing station catches the water that is used for pulping coffee cherry and it is then secured in separate tanks to avoid drainage into the nearby river. The excess coffee pulp is then reused as compost for subsequent crops. No synthetics were used in the production of this lot, which has been certified by an outside organic certification group. This coffee was certified Organic by Control Union World Group Certification.
