OK, yes, I am bit obsessive about my espresso. How obsessive? Mad scientist obsessive. I taste and make at least 10 espressos every single day, 365 days a year. Just to train and develop my palate. I weigh to precision the 0.1 gram of coffee I use. I weigh how much espresso I make. And I write everything down. Well, now that I have written it, it does not sound so bad :-) In last year I tried more than 75% of the espresso blends sold by specialty coffee roasters in US. There are some amazing blends out-there and Dancing Goats holds with best of them. If you are fan of chocolate blends then you have to try it. In milk, chocolate notes comes thorough with marzipan and vanilla finish. Really nicely balanced sweetness and just the right amount of bitterness, so coffee can standout in milk. For milk drinks I recommend pulling this with following parameters: Dose: 19 grams ~ Temp: 198F ~ Shot volume: 1.5oz (by weight 30 grams) ~ Pull time: 24 seconds with 7 second pre-infusion. I use La Marzocco GS/3 and Macap M7D grinder so adjust these parameters to whatever machine you use. I cannot stress enough the importance of precise dosing, so please do yourself a favor and get 0.1 gram scale. Enjoy.
